While most of us love eating, few of us would ever think of making a career of it. Running a restaurant-or even just working in food service usually means long hours of slaving over a hot stove, chopping ingredients at a furious pace, and having the pressure of satisfying finicky customers on a nightly basis. It doesn't matter if your soufflé is to die for or if you make killer veal Parmesan. If you don't know how to make money selling food, you're not going to last. To that end, most will tell you that you can't be a good restaurant owner until you've dirtied a couple cooking aprons yourself. After all, if you have never been in the trenches, how can you know how to motivate, lead, and create the perfect kitchen staff? Once you get that experience, you just need to decide when to take the plunge. When is the right time for that? Of course nobody can tell you that for sure. Simply learn all you can, follow your heart, and enjoy cooking every meal like it's your last.
